  1. Soak the cashew nuts for about 4 hours. Grind to a paste using milk.
  2. Pluck the leaves from stalks. Discard the stalks. Chop the leaves.
  3. Grind ginger, garlic, green chillies and onion together in a mixer-grinder to a paste.
  4. Put oil in a kadai or pan. Add the ground onion paste and stir fry till its brown and oil starts leaving the sides of the paste.
  5. Add the chopped methi ( fenugreek ) and the shelled peas together. Keep stirring for about 15 mins. Add salt to taste. For this recipe, I have used frozen peas though fresh peas are preferred. Fresh peas have a sweetness that frozen peas do not have.
  6. Finally add the cashewnut paste and cream together. Mix well and let it cook till the gravy turns thick. Taste for salt and add more if needed.
  7. Garnish with slit green chillies and ginger jullienes. Serve hot.
